Viognier was harvested Oct. 22, 2021 and was immediately pressed. Fermented at cool temperatures to preserve aromatics. Bottled at the end of fermentation (unfiltered) to make this natural sparkling wine that captures all the bubbles in the bottle. A fun fizz!
