Classic Pinot Noir aromatics of sweet beet root, saddle leather and a myriad of cigar box spices.
- Mouth
The palate is silky and full-bodied with very fine tannins. Beetroot, red fruit and leathery flavours linger.
- Winemaking Notes
Harvested late September and fermented in 1-tonne bin and stainless steel, then aged in French oak for 12 months. A true testament to a hot vintage, this Pinot Noir is fi rmly structured
with hearty tannin, providing the back-bone for an intense flavour
profile. Haunting notes of sweet tobacco leaf, sandalwood and cherry
cola create a style of Pinot Noir that is not for the faint of heart.- Growing Conditions
The 2016 vintage was hot and dry, resulting in great fl avour and
tannin concentration. Harvested September 16, 2016 from our Estate
Vineyard, the concentrated juice was left on skins to cold-soak for four
days before ageing 16-months in neutral French oak barrels.- Food Pairing
