100% Pinot Noir harvested September 30, 2019 at 21.4°Brix from our Estate Vineyard. Hand-bottled during wild fermentation on November 29, 2019. This wine was left unfiltered on lees for extended ageing in-bottle.
It’s all about the red fruit! Sinfully satisfying notes of strawberry shortcake, sour cherry cordial and a touch of freshly-baked bread.
Don’t let the unfiltered lees scare you off. Stand your bottle upright in the fridge and allow the lees to settle before pouring this frothy mousse. Field fresh strawberries and sour cherry add a touch of sweetness to the palate, while the lees character adds a fatness to this native sparkling.
- Winemaking Notes
Fermented cold with wild, ambient yeast in stainless steel tank after some light skin contact in the press (1hr). Bottled before finished ferment to retain natural carbonation.

Baby spinach salad with sliced Niagara strawberries, young chèvre and toasted candied pecans.
