Blanc De Noirs Brut Nature
2016 was a warm year with some drought throughout the summer. Careful monitoring of fruit in the vineyard was crucial to get the pick day right for sparkling wine. Flavours move fast in a warm vintage and acidity can drop quickly. This Blanc de Noirs, made with 100% Pinot Noir is full bodied, balanced and complex enough on its own that we decided to finish it “Brut Nature”. No dosage was used – no other wine and no sugar. It’s completely, naturally, just itself. 34 months of ageing on the lees.
